A manual coffee grinder sits on the counter between uses, doing nothing, until it does everything. The Weber Workshops HG-2 is a manual grinder that takes that idle interval seriously, building toward a result rather than just mechanically reducing beans to grounds.
The 83mm Mazzer conical burrs with a food-safe TiN coating do the cutting, but the detail that distinguishes this grinder from others at its level is the 2-speed transmission gearbox. Light roasts, which are denser and more resistant than their darker counterparts, typically punish the wrist. The gearbox changes that calculation meaningfully, letting you choose a lower gear for the harder work without changing technique. Adjustment runs in 5-micron steps across a range from Turkish fine to pour-over, which is enough resolution to chase a dial-in rather than approximate one. Retention sits below 0.1 grams, so what goes in comes out.
What happens after grinding matters too. The patented Magic Tumbler automates WDT grounds homogenization, distributing the puck before it reaches the portafilter, with no overspill. The lower funnel holds in place via 12 rare earth magnets, so cleaning is a pull and a rinse rather than a tool search. These are the kinds of features that don't appear in a shot but do appear in the consistency of shots over time.
This is a grinder for someone who has already spent years at the counter and knows exactly where the variables live.
